This recipe is an extract from the Slim Well With GL Eating Plan, which is provided free to patients of Richmond and Victoria Diet Clinics. Ingredients
500g extra lean minced beef
400 tinned chopped tomatoes
2 small onions approx 120g total chopped
125g mushrooms chopped
5g mixed Italian dried herbs
4 cloves garlic crushed
1 tsp olive oil
Method
In a saucepan heat the olive oil and when hot add the chopped onion, fry for a few minutes until soft. Add the minced beef and garlic and fry with the onion, breaking it up as you go. Add the tomatoes and herbs. Simmer gently with a lid for 30 minutes. Add the chopped mushrooms and simmer with a lid for a further 20minutes. If the sauce requires thickening, simmer further without the lid. The sauce can be divided into 4 portions and each portion individually frozen for future use.
